One Bowl Wonder Banana Raspberry Muffin Recipe

I love cooking One Bowl Wonder recipes and the combination of Banana and Raspberry works well. These Banana Raspberry Muffins offer a great way to make your next batch of muffins a little healthier.

Ingredients

2 cups plain flour

2 tsp baking powder

¾ cup CSR Caster Sugar

¾ cup milk

¼ cup vegetable oil

2 extra large eggs

1 tsp vanilla extract

1 ripe banana, mashed

½ cup fresh or frozen raspberries

2 tbsp shredded coconut

 

Method

  1. Place the flour, baking powder and sugar into a large mixing bowl and mix until well combined.
  2. Form a well in the centre of dry ingredients and add the milk, oil, eggs and vanilla. Whisk liquids with a fork until combined.
  3. Add banana and berries to bowl and using a large spoon, mix until just combined.
  4. Spoon mixture between 12 x ⅓ cup capacity, lined muffin pans. Sprinkle with coconut and bake at 190°C for 20-22 minutes. Remove to a cooling rack to cool completely.

 

Tips
Substitute raspberries with blueberries or diced mango.
Reduce flour to 1 ½ cups and add ½ cup desiccated coconut for a stronger coconut flavour.
Add some chopped white chocolate to the mixture for a variation.
