Flavoursome Red Lentil Dahl


Dahl is a quick and easy meal to make. A great vegetarian dish which you can add more vegetables to make it more substantial.



1-2 tbsp. Olive Oil

1 ½ cups dried red lentils

1 tbsp. ground cumin

1 tbsp. ground turmeric

1 tbsp. garam masala

½ tbsp. ground ginger

1 tbsp. ground coriander

½ tbsp. mild curry powder

1 onion, diced

4 garlic cloves, diced

4 cups vegetable stock

2 carrots, chopped

1-2 cups water

Fresh Parsley and/or Coriander, chopped finely (optional)



Into a pot on medium heat, add oil, garlic, onion and spices. Cook stirring until onion softens.

Add lentils and carrots, stir, then add Vegetable stock and 1 cup of water. Bring to a simmer then reduce heat and leave to cook for 1 hour on low heat.

You can add the extra cup of water as you notice the lentils absorbing the stock and if you think they need it.

Add Parsley and/or Coriander just before serving.

Best served with Rice and Naan Bread.
