Coconut Water Chicken Marinade
Coconut water is fat free, sugar free, gluten free, contains natural electrolytes and is high in potassium. Here’s a coconut water chicken marinade that is simple, healthy and delicious
4 chicken breasts, cut into cubes
¾ cup coconut water
3 tbs Olive Oil
¼ fresh lime juice
1 tsp chilli powder
1 tsp cayenne pepper
1 to 2 garlic cloves
1 tbs salt.
Put all the ingredients (except the chicken) into a blender and whiz until smooth. Soak the chicken in the marinade for 12 hours. Thread chicken onto skewers and grill until done.
