Bacon Cheeseburger Casserole (Gluten Free)

olive oil spray

1 tablespoon extra virgin olive oil

6 gluten free bacon rashers, diced

1 red onion, diced

2 cloves garlic, crushed

500 g mince beef

2 teaspoons dried parsley

1 teaspoon onion powder

1 teaspoon garlic powder

½ teaspoon dried dill

1 teaspoon dried chives

¼ teaspoon salt

¼ teaspoon pepper

2 tablespoons tomato paste

2 tablespoons gluten-free American Mild Mustard

100 g (1 cup) grated cheddar cheese

4 eggs

½ cup milk

100 g sour cream

Method

Preheat oven to 180 °C. Lightly spray a 28 x 20 cm oven proof dish with oil spray.

Heat oil in a frying pan over medium heat, add bacon and onion and cook until bacon has browned and onions are soft (about 5 minutes). Add garlic and cook for a further minute.

Increase the heat to high and sear the beef mince until brown all over. If there is a lot of liquid from the meat, drain it away before stirring through the garlic powder, dried parsley, onion powder, dill, dried chives, salt and pepper. Remove from heat and stir in tomato paste and American mustard.

Add to prepared oven proof dish and toss with half the grated cheese.

In a separate bowl, whisk together eggs, milk and sour cream. Pour on top of beef mixture and top with remaining grated cheese. Bake in the oven for 35 minutes.

When cooked, remove from oven and allow to sit for 5 minutes before slicing and serving.
