What You Will Need

i. A baking sheet.

ii. A small bowl.

iii. 2 large pans.

iv. A source of heat e.g a stove.

v. A box grater(a multi-sided device with a different type of grating surface on each side, for grating foods).

vi. A chopping board.

Ingredients

i. 8 flour tortillas.

ii. 6 oz. bacon.

iii. 24 oz. Russet potatoes.

iv. 2 Roma tomatoes.

v. 2 poblano peppers.

vi. 2 avocados.

vii. 2 red onions.

viii. 1 cup Monterey Jack cheese.

ix. 1 Jalapeño paper.

x. 4 tsp. Mexican spice blend.

xi. 2 limes.

i.9 tsp. vegetable oil.

Directions

Step 1:Wash and dry all the fresh produce.

Step 2: Cook the bacon;

i. Preheat the broiler(the part of your stove for cooking at high heat) to high.

ii. Place the bacon in the large pan over medium-high heat and cook for between 3 and 6 minutes per side.

Step 3: Prepare and cook other ingredients;

i. Start by halving and seeding the poblano peppers.

ii. Then, halve, peel, and mince the onions.

iii. Next, peel and grate the potatoes on the large holes of the grater.

iv. After that, mince the jalapeño pepper, making sure to remove the seeds for less heat.

v. Thereafter, lightly oil the baking sheet.

vi. Now, place the poblano peppers you prepared earlier on the baking sheet and broil until charred, or for about 5 minutes.

vii. Then, let the cooked poblano peppers cool, before transferring to the chopping board and cutting into ½-inch squares.

viii. Next, clean and set the baking sheet aside.

Step 4: Cook the grated potatoes;

i. In a separate large pan, place the grated potatoes, seasoning them with salt to taste.

ii. Next, drizzle the potatoes with a generous amount of vegetable oil.

iii. Then, add just enough water to cover the potatoes and bring the potatoes to a boil, thereafter letting them cook until all the water has evaporated. This should take about 5 minutes.

iv. Now, add another generous drizzle of oil to the pan with potatoes and toss.

v. After that, set aside about 3 tbsp minced onion for salsa, then add the remainder to the pan.

vi. Similarly, stir in the poblano peppers you cooked and cut into several ½-inch squares, half the jalapeño, and 2 tsp Mexican spice blend.

vii. Now, cook, making sure to toss the mixture frequently for about 6 minutes, or until the onions are soft.

viii. Thereafter, season the mixture with salt and pepper to taste.

Step 5: Toast the tortillas;

i. First, adjust the oven temperature to 425 degrees.

ii. Then place the tortillas on the baking sheet and toast in the oven for about 5 minutes, or until slightly crispy.

iii. Next, remove the baking sheet from the oven.

Step 6: Prepare the remaining ingredients(i.e tomatoes, limes, and avocados);

i. Finely chop the tomatoes.

ii. Now, cut the limes into wedges.

iii. Next, halve, pit, and scoop flesh from the avocados before thinly slicing.

iv. Then, combine the chopped tomatoes plus the 3 tbsp minced onions you reserved into the small bowl.

v. After that, squeeze a generous amount of lime juice and the remaining jalapeno over the bowl.

vi. Now, season the mixture with salt and pepper to taste.

vii. Thereafter, divide the mixture of grated potatoes, minced onions, poblano peppers, and Mexican spice blend between four tortillas on the baking sheet.

viii. Next, sprinkle each tortilla with Monterey jack cheese.

ix. Then top each tortilla with one of the remaining tortillas.

x. Now, bake the tortillas in the oven for about 2 minutes, or until the cheese melts.

Step 7: Finish the quesadillas, serve and enjoy while still warm;
