Butter Chicken in Slow Cooker
With a soft flavour, butter chicken offers a great kid friendly curry. This recipe for Butter Chicken in the slow cooker is not only quick and easy to create; all three of my children enjoyed it.
Butter Chicken Marinade
5 Tbs Greek Yogurt
1 can diced Tomatoes
1.5 Tbs tomato paste
1.5 tsp. Garam Masala
1 tsp Cumin
1 tsp. Ginger
3 Garlic Gloves
Salt (to suit your tastes)
Butter Chicken
1kg Chicken Thighs
1 Red Onion
4 Tbsp Butter
0.5 tsp garam masala
¼ cup water or chicken stock
2-4 Tbsp Thickened Cream
Corriander (for garnish)
Method:
Butter Chicken Marinade
1. Put all ingredients into food processor and mix until smooth.
2. Put marinade and chicken into a bowl and allow to Marinade for 20 minutes or longer if possible.
Butter Chicken Method:
1. Add Onion, half tsp garam masala and 3 Tbps butter to a pan and fry until the onion is soft.
2. Add the chicken and all the marinade with 1 Tbsp butter and cook on a medium-high heat for 5 minutes. You should see the colour of the curry darken and the sauce looks thicker. This step is important to thicken the sauce and to help the spices flavour come out.
3. Transfer to Slow Cooker, add ¼ water or chicken stock and put on low for 4-6 hours.
4. When ready to serve; add thickened cream to butter chicken and mix together. Garnish with coriander and serve.
