Lemon Lamb Shanks

Serves 8 (4 + more)
Ingredients

2 tablespoons olive oil
8 lamb shanks
8 garlic cloves, peeled and whole
1 handful thyme sprigs
2 sprigs rosemary
1 cup white wine (250ml)
1 lemon, cut into 8 wedges
2 cups gluten free chicken stock
salt and pepper
1-2 tablespoons gluten free cornflour (optional)
1 tablespoon honey
Preheat oven to 140°C.
Method
Heat heavy based pot (e.g. Le Creuset) on high heat, add oil and when hot, sear lamb for 2 minutes on each side until browned. You may need to do this in batches.

Then add garlic, thyme and rosemary and cook for 30 seconds. Add wine and allow to bubble for 2 minutes, before adding the lemon wedges and stock. Bring to the boil. Place lid on pot and cook in oven for 3 & ½ hours or until falling off the bone. (Depending on the size of the shanks, it may need 4 hours)
When cooked, remove lamb from pot, cover and rest while you make the sauce.
Remove fat and bring juices to the boil, cooking rapidly until reduced by about a quarter or half. If sauce needs more thickening, take 2–3 tablespoons of the sauce liquid and mix with cornflour in a separate jug. Return to pot and stir continuously over medium heat until it thickens slightly.
Add honey and taste. Adjust accordingly.
Serve lamb shanks with sauce, sweet potato mash and steamed green beans.
Tip: To remove fat add a couple of mugs of ice to the pot. The fat accumulates around the cold ice and solidifies. Remove with a slotted spoon and discard.
Our Experience With this Lemon Lamb Shanks Recipe

When we first had the opportunity to work with Jodie Blight, creator of the recipeezi Gluten Free app, we downloaded the app and started to play around with it. We were immediately impressed by a few features of the app, particularly the ability to filter by cooking time. This is so handy when you’re a busy parent with hungry kids! We also liked how easy it is to navigate the app, and how it can generate a shopping list for you.
The first recipe we decided to try was this one. With the weather cold and time on hand for a slow cook, this seemed perfect. I liked the fact that it is a bit different to our previous experiences with slow-cooked lamb shanks, which are all tomato-based.
We were really pleased with how this one turned out – the lemony zing is delicious and makes it feel not quite as heavy as a tomato-based lamb shank recipe. Oh, and the way the lamb just falls off the bone is amazing!
Give this recipe a try if you’re looking for a hearty winter dish with lamb. We made it on this scale with 4 medium and 4 very large shanks for our family of five, and we had lots of leftovers that were, if anything, even yummier the next day!
