Roasted Salmon With Crispy Potatoes And Broccoli

- Preheat your oven to 200 degrees C. Then coat broccoli, onions and potatoes in olive oil, salt and pepper and lay evenly onto a large baking tray. Roast these for approximately 15 minutes.
- Season your salmon filets with salt and pepper before adding these to the baking tray. Continue to roast everything until it is cooked through. This could take anywhere between 10-15 minutes.
- While your salmon is in the oven whip together mayonnaise, fresh lemon juice and minced garlic. This dip will complement the finished dish perfectly.
- Take your baking tray out of the oven and serve immediately.

- Coat chicken strips in your chosen fajita seasoning and set aside. Slice onions and capsicum into strips.
- In a large frying pan, heat olive oil over medium heat before adding your chicken. For large amounts of chicken, you may wish to cook in batches. Once the chicken is just cooked, set to one side.
- In the same pan, fry your onions and capsicum until they are cooked yet not too tender. Add the cooked chicken strips back to the pan and combine everything.
- Add a generous squeeze of fresh lime juice before serving.

- In another bowl combine the juice and zest of half a lemon with green pesto. Season with salt and pepper if desired.
- Chop your grilled vegetables into bite-sized pieces and add them to the cooked pasta and pesto.
- Garnish with fresh tomatoes and parsley and served at room temperature.
Steak With Kale And White Bean Mash

- Begin by seasoning your steaks before grilling them to your liking. For the perfect steak, ensure you allow the meat to come up to room temperature before cooking and allow it to rest prior to cutting.
- Place thinly sliced parsnips into a bowl of water and microwave on the highest setting for approximately 5 minutes or until the parsnips are cooked and tender.
- Once cooked, place parsnips into a food processor along with cannellini beans which have been well rinsed and drained. Combine the two until they are mixed well but still nice and chunky. Add chopped kale to the mixture and heat everything through.
