Mums Cooking Challenge Month #2 FISH
We kick off month 2 of the Mums Cooking Challenge with the theme of FISH. The idea behind the Mum’s Cooking Challenge is to help families cook new and interesting dishes while also being inspired by viewing other dishes cooked by fellow busy mums. Hopefully together we can learn new and interesting dishes, add some excitement to the cooking routine and come up with great recipe ideas for our community of mums to enjoy. Plus there is an added benefit that not only will you have fun, you can win some great prizes!

Here is what we have cooked so far this Month in our Mums Cooking Challenge FISH Theme:
1. Seasoned Salmon with Jacket Potatoes and Oyster Veggies
Salmon
Using tweezers, find and remove bones from the Salmon
Place the Salmon skin side up
Drizzle olive oil over the skin and sprinkle salt and pepper over the Salmon.
Add oil to a fry pan and heat up.
Place Salmon skin side down and cook for 2-3 minutes until you see the colour of the fish changing half way up the fish and then flip for another 1-2 minutes.
Jacket Potatoes
Add your potatoes to a pot of water and bring to the boil until semi soft.
Encase in foil and add to fire place, Oven or BBQ for 20-30 minutes to complete the cooking process.
Serve with butter or Sour Cream and other desired toppings.
Veggies
Using:
4 carrots
2 zucchinis
- Cut carrot & Zucchini into thin slices
- Add a dash of oil to your frying pan or wok and heat.
- Add carrot, zucchini and a small amount of water to the frying pan to cook them. (The water helps avoid them burning and offers a bit of a steam cook)
- 2 minutes prior to serving add 1 tablespoon (or to your liking) of Oyster Sauce and mix through the veggies.
2. Beer Battered Fish with Chips & Capsicum Taco’s
Beer Battered Fish
This meal was a very simple quick and easy mid week meal. We used store bought Beer Battered Fish and oven chips adding both to the oven for the recommended cooking time 🙂
Capsicum Taco’s
Using the Capsicums from our garden we cut the top off and hollowed them out with a teaspoon.
To this we added our already cooked Taco mince to the Capsicums and then put them into the oven to cook for 10 -15 minutes until tender
Top with Parmesan cheese and serve.
3. Salt & Pepper Calamari, Potato Wedges & Buttery Garlic Mushrooms
Salt & Pepper Calamari is a family favourite, with a yum, light flavour. The side dishes can be modified to suit family preferences making it ideal. Click here to see the complete recipe
