Seasoned Salmon with Jacket Potatoes and Oyster Sauce Veggies

A healthy dish that can be refined to suit your families individual tastes. With the benefit of Omega3 it offers a great way to incorporate fish into your diet.

Salmon

Using tweezers, find and remove bones from the Salmon
Place the Salmon skin side up
Drizzle olive oil over the skin and sprinkle salt and pepper over the Salmon.
Add oil to a fry pan and heat up.
Place Salmon skin side down and cook for 2-3 minutes until you see the colour of the fish changing half way up the fish and then flip for another 1-2 minutes.

 

Jacket Potatoes

Add your potatoes to a pot of water and bring to the boil until semi soft.

Encase in foil and add to fire place, Oven or  BBQ for 20-30 minutes to complete the cooking process.

Serve with butter or Sour Cream and other desired toppings.

 

Veggies

Using:
4 carrots
2 zucchinis

  1. Cut carrot & Zucchini into thin slices
  2. Add a dash of oil to your frying pan or wok and heat.
  3. Add carrot, zucchini and a small amount of water to the frying pan to cook them. (The water helps avoid them burning and offers a bit of a steam cook)
  4. 2 minutes prior to serving add 1 tablespoon (or to your liking) of Oyster Sauce and mix through the veggies.
