Summer Sticky Rice with Mouth-Watering Mango

This Summer Sticky Rice with Mouth-Watering Mango is sure to be a hit recipe for families everywhere.

Ingredients
1 ¾ cup of rice
1 can of coconut milk
¾ cup of sugar
1 ¼ tsp salt
1 tsp rice flour
4 or 5 Pandanus leaves

Method
Wash rice at least 3 times until water runs clear and soak in water overnight.
Put soaked rice into a microwavable bowl, add water just enough to cover surface of the rice, place 2 pandanus leaves on top. Cover with lid or plastic wrap (poke 2 -3 little holes so the steam can escape). Microwave for 8 minutes on high.
Separate ¾ cup coconut milk in a small bowl, put remaining coconut milk in a pot, add sugar and salt, bring to boil on medium-low heat.
Add 2 pandanus leaves in coconut milk mixture, stir frequently until the sugar dissolves. When the mixture boils, remove from heat.
Put steamed rice in a pot that has cover, add coconut milk to rice, stir quickly until it is mixed well and cover it for 15 minutes.
For separated coconut milk in step number 3, add rice flour and ¼ tsp salt in it and mix well. Put in a pot and bring to boil on medium-low heat, stir frequently until the mixture is thick, remove from heat and set aside for topping.
Serve with juicy, mouth watering, mango and top the rice with the coconut cream topping.
