Veg loaded Rissoles with Salad and Soy Mayo Sauce

These kid friendly veg loaded rissoles are loaded with vegetables to make them a tasty and healthy dinner option.

INGREDIENTS 

Rissoles:

1/3 bunch kale

500g beef mince

50g red onion (1/4 red onion)

115g carrot, (1 carrot)

4 tbpsn flat leaf parsley

2 tbsp. organic tomato paste

1 egg yolk

25g pine nuts

Oil spray

2 tbsp. soya mayo

Lemon wedges 

Salad:

160g cos lettuce 

50g radicchio 

50g carrot  

50g beetroot 

70g cherry tomato

25g avocado 

25g radish

Salad Dressing:

Juice of 1 lemon

2 tbsp. of olive oil

METHOD

1. Lightly toast pine nuts to replace bread crumbs in this recipe, then finely grind into a pine crumb in a mortar and pestle. 

2. Finely chop kale, red onion, flat leaf parsley 

3. Grate carrot in a julienne or normal grater

4. Pour beef mince into a bowl along with all ingredients and then start to mix with clean hands, rolling into small balls.

5. Spray a hot pan with olive oil spray and gently press rissoles until a touch flatter

6. Meanwhile, get all salad ingredients into bowl, mix together and dress.

7. Serve with rissoles, dollop of soy mayo and lemon wedges.
