Creamy Microwave Potato Bake
This creamy potato bake is a family favourite that we enjoy having and with the microwave doing most of the work, it is a simple recipe that tastes good and is easy to do.
Ingredients
- 6-10 potatoes depending on size
- 300ml cream
- 1/2 cup milk
- chicken noodle or french onion packet soup mix
- 1-2 tbs Dijon mustard
- 1/2 onion–thinly sliced
- a handful of diced bacon (optional)
- grated cheese
Method
- Thinly slice potatoes. Layer potatoes in a microwave dish that has a lid, adding bacon and onion between layers.
- Combined cream, milk, soup mix and mustard together. Pour over potatoes. The cream mix should cover potatoes but, not be swimming in it. Reduce if required. Need more? Add extra milk. Cover with grated cheese.
- Cook for 15 minutes with the lid on. Check to see if potatoes are soft. Continue to cook in 5 minutes intervals checking softness until done.
- Depending on your microwave this will take between 20-35 minutes.
